Chicken Jhal Fry Recipe, A Spicy Bengali Dish Packed With Flavour

Welcome to the world of Bengali cuisine! Today, we'll be learning how to make the famous Chicken Jhal Fry, a spicy and flavourful dish.

First, marinate the chicken with ginger-garlic paste, turmeric, and red chilli powder. Let it sit for 30 minutes to absorb all the flavours.

In a pan, heat oil and add whole spices like cinnamon, cardamom, and cloves. Then, add chopped onions and sauté until golden brown.

Next, add the marinated chicken and cook until it turns golden brown. Then, add chopped tomatoes and cook until they turn mushy.

Now, it's time to add the star ingredient - Jhal Jhol paste. This paste is made with a blend of spices like cumin, coriander, and red chillies.

Add the Jhal Jhol paste to the chicken and mix well. Let it cook for a few minutes until the chicken is coated with the spicy paste.

To balance out the heat, add a splash of water and let the chicken simmer for 10-15 minutes. This will help the flavours to infuse into the chicken.

Once the chicken is cooked and the gravy has thickened, add a dollop of ghee for that extra richness and flavour. Give it a good mix.

Your Chicken Jhal Fry is now ready to be served! Garnish with fresh coriander leaves and serve hot with steamed rice or roti.
